摘 要:目的了解白银市市售食品中铅、镉砷、汞的污染水平,并对其污染状况做出综合评价,为白银市开展食品安全风险评估和采取针对性控制措施提供科学依据。方法按照白银市2012年-2018年食品化学污染物监测计划,结合本地区食品种类及分布特征,对市所辖县区进行全覆盖采样,按《国家食品污染和有害因素风险工作手册》规定的具体方法对样品中铅、镉、砷、汞进行检测,采用食品中污染物限量、单因子污染指数和综合污染指数对污染状况进行评价。结果共采集8类食品521份样品,铅、镉、汞的总超标率分别为4.6%、1.2%、0.7%,其中蔬菜铅超标率最高。蔬菜铅污染指数为0.708,达警戒线。蔬菜的综合污染指数为1.511,属于轻度污染。结论白银市8类食品受到不同程度铅、镉砷、汞污染,蔬菜污染较为严重,其余食品污染程度较低,应继续加大蔬菜监测力度。Objective To measure the contents of lead,cadmium,arsenic and mercury in eight categories of foods,and evaluate their contamination condition in Baiyin City,so as to provide basis for the evaluation of foods safety and the effective measures to control heavy metal contamination.Methods According to the surveillance plan during 2012-2018,combined with the food types and distribution characteristics of the region,the samples were collected from three counties and two districts.The heavy metal contents in food were measured and evaluated according to the National Work Manual on Food Pollution and Risk of Harmful Factors.The heavy metal pollution status was evaluated by using the pollutant limit in food,single factor pollution index and comprehensive pollution index.Results A total of 521 samples in 8 category of foods were collected.The total over-standard rates of lead,cadmium and mercury were respectively 4.6%,1.2% and 0.7%.Among them,the over-standard rate of vegetable lead was the highest.The lead pollution index of vegetables was 0.708,reaching the warning line.The comprehensive pollution index of vegetables was 1.511,the pollution of which was mild.Conclusion Eight categories of foods in Baiyin City were contaminated by lead,cadmium,arsenic and mercury,and the pollution of vegetables was more serious.Vegetable monitoring should be strengthened continuously.
