摘 要:为了探讨日粮中添加以发酵麸皮多糖、腐殖酸钠、丁香酚、肉桂醛和辣椒油树脂为主的复合营养素对大足黑山羊羔羊肌肉营养成分、脂肪酸组成和抗氧化活性的影响,试验将24只2~3月龄、体重[(10.25±0.83)kg]相近、体况良好的大足黑山羊羔羊随机分为对照组和试验组,每组12只羊(公、母各半)。对照组饲喂基础日粮,试验组在基础日粮中添加5 g/kg的复合营养素,试验期为70 d,其中预饲期10 d,正试期60 d。试验结束后各组随机选取6只山羊进行屠宰,采集背最长肌,采用酶联免疫法测定大足黑山羊羔羊肌肉抗氧化指标[总抗氧化能力(T-AOC)、过氧化氢酶(CAT)、谷胱甘肽过氧化物酶(GSH-Px)、超氧化物歧化酶(SOD)和丙二醛(MDA)];采用气相色谱-质谱联用法检测肉样脂肪酸组成;采用凯氏定氮法、索式提取法及直接干燥法测定肌肉中粗蛋白、粗脂肪及水分的含量。结果表明:与对照组相比,日粮中添加复合营养素对大足黑山羊羔羊屠宰率及肌肉营养成分无显著影响(P>0.05);可显著降低大足黑山羊羔羊背最长肌中C20∶0的比例(P<0.05)及显著增加肌肉中CAT活性(P<0.05)。说明日粮中添加5 g/kg的复合营养素对大足黑山羊羔羊肌肉营养成分无影响,但可降低其背最长肌中C20∶0的比例及增加肌肉中CAT活性。To investigate the effect of dietary supplementation of compound nutrients(fermented wheat bran polysaccharides, sodium humate, eugenol, cinnamaldehyde and oleoresin paprika) on muscle nutrient and fatty acid composition and antioxidant index of Dazu black goat lambs, twenty-four Dazu black goat lambs with similar body weight [(10.25 ± 0.83)kg] were selected and randomly divided into control group and test group with 12 lambs pergroup(half male and half female). The control group was fed with a basal diet, while the test group was fed a basal diet with 5 g/kg compound nutrients. The trial period was 70 days, including 10 days of pre-feeding and 60 days of normal trial. At the end of experiment, 6 goats were randomhy selected from each group for slaughter and the longissimus dori musde were collected, and muscle antioxidant indexes [total antioxidant capacity(T-AOC), catalase(CAT), glutathione peroxidase(GSH-Px), superoxide dismutase(SOD) and malondialdehyde(MDA)] of Dazu black goat were determined by enzyme-linked immunosorbent assay;the fatty acid composition of meat samples was detected by gas chromatography-mass spectrometry;and the contents of crude protein, crude fat and water in muscle were determined by Kjeldahl method, Soxhlet extractor method and direct drying method, respectively. The results showed that dietary supplementation of compound nutrients had no significant effects on slaughter rate and muscle nutrient composition of Dazu black goat lambs(P>0.05) compared with the control group, but the proportion of C20∶0(P<0.05) in longissimus dorsi muscle of Dazu black goat lamb was significantly decreased,and CAT activity were significantly increased(P<0.05). The results indicated the addition of 5 g/kg compound nutrients in the diet had no effect on the muscle nutrition of Dazu black goat lambs,but the proportion of C20∶0 in Longissimusdorsi Muscle of Dazu black goat lambs was decreased and CAT activity in the muscle was increased.
