摘 要:蓝莓果醋具有丰富的营养成分与保健价值,它口感酸甜,含有天然丰富的营养元素。与其他的功能性醋品相比,蓝莓果醋的营养成分种类更多,含量也更高。同时蓝莓果醋也拥有抗疲劳、抗肿瘤、抗心脑血管疾病、改善睡眠、提高记忆力、提高人体的免疫能力、延缓衰老及美容等多种功效。该研究对蓝莓果醋的制备及对人体保健功能的研究进行全方面的分析与总结,旨在为蓝莓果醋的发展提供思路,推动行业发展。Blueberry vinegar has rich nutritional components and health care value.It has a sweet and sour taste and contains rich natural nutrients.Compared with the other functional vinegars,blueberry vinegar has more types of nutrients and higher content.At the same time,blueberry vinegar also has a variety of functions such as anti-fatigue,anti-tumor,anti-cardio-cerebral-vascular diseases,improving sleep,improving memory,improving the human immune system,delaying aging and beauty.This study analyzes and summarizes all aspects of the preparation of blueberry vinegar and research on human health functions,with the aim of providing ideas for the development of blueberry vinegar and promoting the development of industry.
