摘  要:白云边酒是我国浓酱兼香型白酒的代表,白云边酒的酿造以一年为一个生产周期,分轮次进行生产操作。受自然发酵工艺影响,白云边三轮一次原酒的正丙醇含量存在偏高的问题。东方伊萨酵母是白云边发酵过程中的优势酵母之一。通过淀粉吸附法制备出酒率高、正丙醇含量较低的东方伊萨酵母P43固态菌剂,并追踪菌剂中菌体存活率,发现菌液与淀粉比例为1∶2时,菌体存活率较高,4℃低温储存同样有益于菌体的存活。在强化曲制备时,压块制曲和添加乳酸早期有助于减少细菌数量。随着强化曲储存时间延长,东方伊萨酵母数量显著减少。将强化曲应用于生产实验,三轮一次原酒正丙醇含量下降27.4%,出酒率提高22.9%。功能菌剂与强化曲的制备为进一步提高原酒品质,改良发酵工艺提供了应用技术基础。Baiyunbian liquor is the representative of Nongxiang-Jiangxiang Baijiu,and its production process is carried out in batches every year.Affected by the natural fermentation process,the concentration of n-propanol in Baiyunbian liquor obtained in the third fermentation batch is sometimes unexpectedly high.Issatchenkia orientalis is one of the dominant yeasts in the fermentation process of Baiyunbian liquor.In this study,solid-state Issatchenkia orientalis inoculant with high liquor yield and low n-propanol yield was prepared by using the starch adsorption method,and the survival rate of I.orientalis was analyzed.The results showed that the survival rate of the yeast was high when the ratio of yeast culture to starch was 1∶2.Storage at 4℃was also beneficial to the survival of the yeast.During the preparation of strengthened Daqu,compacting and adding lactic acid could reduce the amount of bacteria.With the increase of Daqu storage time,the number of I.orientalis strains decreased significantly.After applying the strengthened Daqu to the production,the n-propanol content of the base liquor obtained in the third fermentation batch decreased by 27.4%,and the liquor yield increased by 22.9%.The preparation of the solid-state I.orientalis inoculant and the strengthened Daqu have provided technical basis for the improvement of the traditional fermentation process and the quality of the base liquor.
