白茅根金银花抗疲劳凉茶饮料的研制

摘　　要：以白茅根、金银花为主要原料研制凉茶饮料,并考察饮料的抗疲劳作用。通过正交试验确定饮料最佳配方,测定负重游泳时间,测定剧烈运动后肝糖原、血清尿素和血乳酸的值,研究饮料的抗疲劳作用。结果显示,凉茶饮料最佳配方为白茅根添加量30%、金银花添加量20%、白砂糖添加量10%、柠檬酸添加量0.10%。抗疲劳试验结果显示,凉茶饮料能延长负重游泳时间,提高小鼠肝糖原贮备量,降低小鼠剧烈运动后血清尿素含量和血乳酸水平。试验结果表明,研制的白茅根金银花凉茶饮料风味独特,清热解渴,并具有抗疲劳作用。The beverage of herbal tea was made of the root of citronella and honeysuckle,and its anti fatigue effect was investigated. With orthogonal test,the best formula of the drink was determined,the swimming time was measured,the liver glycogen,serum urea and blood lactate were measured after strenuous exercise,and the anti fatigue effect of the drink was studied. The results showed that the best formula of herbal tea beverage was 30% of the root of citronella,20% of honeysuckle,10% of sugar and 0.10% of citric acid. The results of anti fatigue test showed that herbal tea beverage could prolong the swimming time,increase the storage of glycogen in mice liver,and reduce the content of serum urea and blood lactate after strenuous exercise. The results showed that the beverage had unique flavor,heat clearing and thirst quenching,and anti fatigue effect.
