摘  要:目的了解2014—2018年盐城市盐都区市售面制食品中的铝含量,对盐都区居民经面制食品铝的暴露量进行评估。方法对2014—2018年盐城市盐都区随机采集的4类市售面制食品进行铝含量的检测,结合2002年中国居民营养与健康状况调查数据,计算盐都区居民经面制食品每周铝的摄入量。结果5年共检测面制食品1280份,合格率为59.5%,铝含量均值为142.5 mg/kg,中位数为49.2 mg/kg。烘焙、蒸制、油炸、膨化食品合格率分别为82.2%、59.4%、35.9%和60.6%。市区和乡镇面制食品合格率分别为79.1%和40.0%。铝一般摄入量人群每周铝的摄入量为0.9 mg/kg bw,低于联合国粮农组织/世界卫生组织(FAO/WHO)食品添加剂联合联合专家委员会(JECFA)规定的暂定每周耐受摄入量(PTWI)2 mg/kg bw标准;铝高摄入量人群面制食品每周摄入的铝为7.7 mg/kg bw,是JECFA规定的PTWI的3.8倍。结论2014—2018年盐城市盐都区油炸食品中铝含量超标明显,乡镇面制食品的合格率尤其低,应加大对油炸食品及乡镇面制食品的监管。Objective To understand the aluminum content in commercially available flour food in Yandu District in Yancheng City from 2014-2018,evaluate the exposure of aluminum through flour food of residents in Yandu District.Methods The aluminum content was detected in four categories flour food collected randomly in Yandu District of Yancheng City from 2014-2018.Combined with the data of China Nutrition and Health Survey in 2002,the weekly intake of aluminum by flour food of residents in Yandu District were calculated.Results Totally 1280 samples of flour food were detected during five years,the qualified rate was 59.5%,the mean value of aluminum content was 142.5 mg/kg and the median was 49.2 mg/kg.The qualified rate of baked food,steamed food,fried food and puffed food was 82.2%,59.4%,35.9%and 60.6%,respectively.The qualified rate of flour food in urban district and town was 79.1%and 40.0%,respectively.The weekly intake of aluminum of the general intake residents was0.9 mg/kg bw,it was lower than the provisional weekly tolerable intake(PTWI)(2 mg/kg bw)prescribed by Joint Expert Committee on Food Additives(JECFA)of FAO/WHO.The weekly intake of aluminum of the high intake residents was 7.7 mg/kg bw,it was 3.8 times as much as PTWI.Conclusion The aluminum content in fried food in Yandu District in Yancheng City exceeds the standard obviously,and the qualified rate of flour food in town is especially low.It is necessary to strengthen supervision of the fried food and the flour food sold in the town.
