摘 要:为了解广西水牛主产区散养户生鲜乳主要乳成分含量,以户为单位采集早班奶样,使用MikoscanTM FT120乳成分分析仪测定样品蛋白质、脂肪、乳糖、非脂固形物等主要指标含量。参照广西食品安全地方标准DBS45011-2014《生水牛乳》和相关企业分级收购标准的相关指标要求,分析达标情况。抽样散养户生鲜水牛乳合格率达到95.45%,合格样品主要乳成分为蛋白质4.66%,脂肪8.11%,总固形物19.07%,非脂固形物10.02%,乳糖5.30%。特级、一级、二级、三级和四级奶所占比例分别达到15.04%、12.03%、32.33%、22.56%、13.53%。抽样散养户生鲜水牛乳合格率较高,测定主要乳成分含量高,品质优秀。In order to find out the content of main milk components in raw milk of free-range household in the main production area of Guangxi buffalo,the samples of early-shift milk were collected by households,the main contents of protein,fat,lactose and non-fat solids were determined by MikoscanTM FT120.According to Guangxi food safety local standard DBS45011-2014《raw buffalo milk》and the related enterprise level purchase standard related index request,the analysis reaches the standard situation.The qualified rate of free-range fresh buffalo milk was 95.45%.The qualified milk was composed of 4.66%protein,8.11%fat,19.07%total solids,10.02%non-fat solids and 5.30%lactose.The proportion of super,first,second,third and fourth grade milk reached 15.04%,12.03%,32.33%,22.56%and 13.53%respectively.The quality of raw water buffalo milk from free-range households is high,the content of main milk components is high and the quality is excellent.
