茶多酚改性聚乙烯醇膜包装对西湖龙井茶贮藏品质的影响

摘　　要：良好的包装材料对绿茶品质的保持至关重要。文章以茶多酚改性聚乙烯醇(PVA)膜为包装材料,研究其对西湖龙井茶贮藏期间茶多酚、维生素C、游离氨基酸含量和总抗氧化能力的影响。结果表明,随着贮藏时间的延长,茶多酚、维生素C的含量和总抗氧化能力均呈下降趋势,而游离氨基酸含量呈先升后降的趋势。与未改性的PVA膜相比,茶多酚改性PVA膜对茶多酚、维生素C、游离氨基酸的含量和总抗氧化能力的保持效果更好,其中,茶多酚添加量5%的改性PVA膜对西湖龙井茶保鲜效果最好。相关性分析表明,在西湖龙井茶贮藏过程中,总抗氧化能力与茶多酚、维生素C、游离氨基酸的含量呈极显著正相关。Good packaging material was crucial to maintaining the quality of green tea.In this paper,the effect of tea polyphenols modified polyvinyl alcohol(PVA)film on the content of tea polyphenols,vitamin C,free amino acids and total antioxidant capacity of Xihu Longjing Tea during storage were studied.The results showed that tea polyphenols,vitamin C and total antioxidant capacity showed a downward trend with the prolongation of storage time,while the free amino acids showed a trend of first increased and then decreased.Compared with the unmodified PVA film,tea polyphenols modified PVA filmhad better maintenance effect on the content of tea polyphenols,vitamin C,free amino acids and total antioxidant capacity.Among them,the tea polyphenols modified PVA membrane with 5%tea polyphenols had the best preservation effect on Xihu Longjing Tea.Correlation analysis showed that the total antioxidant capacity was positively correlated with tea polyphenols,vitamin C and free amino acids during the storage of Xihu Longjing Tea.
