摘  要:常见乳源真伪检测方法的开发对于特色乳品产业开发以及保障消费者安全与权益都有着重要的作用。本研究采用毛细管凝胶电泳技术,对牛乳及水牛乳、牦牛乳、驴乳、马乳、羊乳、骆驼乳等特色乳品进行测试。通过计算各乳品蛋白峰与内标蛋白相对迁移时间,以及差异蛋白峰面积比值,构建聚类分析模型,筛选不同乳品靶标蛋白峰以及判定标准。通过对方法稳定性、重复性、检出限等参数的研究,构建常见乳源成分评价体系。此外,对市售样品进行检测,证明本方法可以实现对靶标乳源蛋白的快速筛查。The development of common detection methods of milk source authenticity plays an important role in the development of characteristic dairy industry and the protection of consumer safety and rights.In this study,capillary gel electrophoresis technology was used to test cow milk and buffalo milk,yak milk,donkey milk,horse milk,goat milk and camel milk.By calculating the relative migration time of each dairy protein peak and internal standard protein,as well as the ratio of different protein peak area,a clustering analysis model was established to screen different dairy target protein peaks and the determination criteria.By studying the parameters of method stability,repeatability and detection limit,a common milk source component evaluation system was established.Moreover,the commercial samples were tested to prove that this method can realize the rapid screening of the target milk source protein.
