摘  要:豆类中水溶蛋白含量的高低对于豆类的用途和储存条件及储存时间的长短有着非常重要的关系,使用全自动水溶蛋白速测仪,建立了一种快速测定豆类中水溶蛋白的方法,对山西省内种植的四种典型豆类进行了分析检测。结果表明:豆类的品种对水溶蛋白速测仪法测定结果并没有显著影响,使用水溶蛋白速测仪法测定结果与使用GB/T 31785-2015附录A测定结果并无显著性差异,测试结果的回收率高,准确度好。本研究为快速测定豆类中的水溶蛋白提供了参考依据。The content of water-soluble protein in legume has important relationship with the processing, storage condition and storage period.This study examined legume grown in Shanxi Province.The detection results of fully automatic Water-soluble protein rapid detector is analyzed.A rapid method for the determination of water-soluble protein in legume was developed.The results show that:The variety of legume had no significant effect on the results of fully automatic Water-soluble protein rapid detector.There was no significant difference between the results of fully automatic Water-soluble protein rapid detector and GB/T 31785-2015.The test result has high recovery rate and good accuracy.This study provides a reference for the rapid determination of legume water-soluble proteins.
