摘  要:罗非鱼作为中国重要的淡水养殖鱼种,年产量极大,对其副产物的综合利用有利于提高其整体的经济价值。在其各种副产物中,罗非鱼鱼皮的营养价值较高,富含胶原蛋白及多种矿物质。本工艺主要介绍了罗非鱼鱼皮的水发生产流程,包括去肉、清洗、沥水、碱液浸泡、漂洗切丝、烫漂、冰水浸泡这7个主要加工工序,并阐述了各工序的工艺要点。相对于普通水发鱼皮,本工艺所得鱼皮具有外观形态更厚实,更通透,口感更爽脆的优点。作为鱼皮的简易加工工艺,其对设备要求低,流程简单,适合在中小型食品工厂中推广及应用。另一方面,本工艺为罗非鱼皮的综合利用提供借鉴,并为水发罗非鱼鱼皮产品的标准提供参考。Tilapia was an important freshwater fish species in China,its annual yield was huge.The comprehensive utilization of its by-products was beneficial to improving its overall economic value.Among the various by-products,tilapia skin had high nutritional value,and it was rich in collagen and a variety of minerals.The water-soaked production process of tilapia skin was mainly introduced,including seven main processing procedures and they were meat removal,cleaning,waterlogging,soaking in alkali solution,rinsing and slicing,blanching and soaking in ice water,and the technology points of each procedure was explained.Compared with the normal water-soaked fish skin,the fish skin obtained by this technology had the advantages of thicker appearance,more transparent and more crisp taste.As a simple and easy processing technology of fish skin,it had low requirements for equipment and simple process,which was suitable for popularize and application in small and medium-sized food factories.On the other hand,the technology provided a reference for the comprehensive utilization of tilapia skin,and it provided a reference for the standard of water-soaked tilapia skin products.
