摘 要:选用3种常用的增塑剂甘油、聚乙二醇和山梨醇,研究不同增塑剂及其质量分数对大豆分离蛋白膜O2透过率、CO2透过率和透气比等选择透气性能的影响。结果表明:添加增塑剂甘油、聚乙二醇、山梨醇的SPI膜,O2透过率和CO2透过率都随增塑剂质量分数的增加而增大,而且O2透过率和CO2透过率变化规律大致相同,透气比随增塑剂质量分数的增加而变化的幅度不大,集中在1~2之间,其中以聚乙二醇作为增塑剂时的SPI膜选择性优于甘油和山梨醇,甘油质量分数的变化对透气比影响最大。可根据SPI膜的包装对象选择合适的增塑剂,从而达到理想的选择透气性。可为智能型可食性膜特别是蛋白膜的制备提供参考。Glycerol,polyethylene glycol and sorbitol,which were commonly used as plasticizers,were selected to study the effects of plasticizers on the permeability of soy protein isolate(SPI)films.The effects of the three plasticizers and their additions on the selective permeability of O 2,CO 2,and permeability ratios of SPI films were studied.The results showed that the ratio(β)of CO 2 permeability(P(CO 2))to O 2 permeability(P(O 2))of SPI film with plasticizer glycerol,polyethyleneglycol or sorbitol was concentrated within 1-2,and the P(O 2)and P(CO 2)increased with the increase of plasticizers mass fraction.Because the change rules of O 2 transmittance and CO 2 transmittance were approximately the same,βchanged little with the mass fraction of plasticizer.The film selectivity of polyethylene glycol as plasticizer was better than that of glycerol and sorbitol,and the change of glycerol mass fraction presented the greatest effect onβ.Therefore,the suitable plasticizer can be selected according to the packaging object of SPI film,so as to achieve the ideal permeability.The results can provide reference for the preparations of intelligent edible films,particularly SPI films.
