摘 要:对在瑞丽市定植的9个卡蒂姆咖啡品种进行商品豆物理特性、内含物及杯品质量测定评价,结果表明:‘35号’、‘46号’、‘37号’和‘42号’4个品种的鲜干重比低于5.5,‘50号’和‘37号’出米率较高,‘46号’千粒重最大;17号筛分级后,≥17#商品豆总重以及≥17#正常豆总重‘48号’最高,‘35号’、‘36号’、‘49号’的千粒重、≥17#商品豆总重以及≥17#正常豆总重均偏低;≥17#畸形豆及碎豆重,‘37号’最高,‘43号’最低;≥17#斑点豆重,‘42号’最高,‘49号’最低;<17#畸形豆及碎豆重,‘35号’最高,‘42号’最低;<17#斑点豆重,‘42号’最高,‘48号’最少;蛋白质含量‘35号’最高,粗脂肪含量‘50号’最高,组纤维含量‘46号’,总糖含量‘36号’最高,水浸出物含量‘43号’最高,咖啡因含量‘35号’最高。通过对每个主成分所对应的方差贡献率建立综合评价模型,计算综合得分发现,9个品种综合得分最高的是‘42号’,然后依次是‘50号’、‘43号’、‘46号’、‘37号’、‘48号’、‘49号’、‘36号’、‘35号’。杯品质量‘35号’、‘49号’、‘50号’分值较高。综合来看,9个品种在瑞丽物理特性表现出色,品质表现中等,生产上可以考虑推广应用。The physical properties,inclusions and tasting quality of 9 different accessions of coffee Catimor variety(Coffea arabica L.cv.Catimor)were measured and evaluated.The fresh/dry weight ratios of 4 accessions 35,37,42,46 are less than 5.5.The dry bean ratios of Accessions 37 and 50 are higher while the dry weight per 1000 beans of Accession 46 is the highest.All coffee beans were sieved with the sieve 17 for classification and grading.Accession 48 is the highest in the total dry weight of coffee beans and normal beans≥the size of the sieve 17,and Accessions 35,36 and 49 are slightly lower in dry weight per thousand beans,and total dry weight of coffee beans and normal beans≥the size of the sieve 17.Accession 37 is the highest in total dry weight of deformed and broken beans≥the size of the sieve 17 while Accession 43 is the lowest.Accession 42 is the highest in the weight of defected beans≥the size of the sieve 17 while Accession 49 is the lowest.Accession 35 is the highest in the dry weight of deformed and broken beans<the size of the sieve 17 while Accession 42 is the lowest.Accession 42 is the highest in the dry weight of defected beans<the size of the sieve 17 while Accession 48 is the lowest.Accession 35 is the highest in protein content;Accession 50 contained the highest crude protein;Accession 46 contained the highest crude fibres;Accession 36 contained the highest total sugar;Accession 43 contained the highest water extract;Accession 35 contained the highest caffeine.Based on the variance contribution rate of each principal component,a comprehensive evaluation model was established to calculate the comprehensive score of 9 accessions of coffee Catimor.Accession 42 is the highest in the comprehensive score,followed by Accessions 50,43,46,37,48,49,36 and 35.Cupping test showed Accessions 35,49 and 50 are much higher in cupping scores.Overall,all the 9 accessions of Catimor in Ruili showed excellent physical properties,fair average cupping scores,and are recommended for planting in a production scale.
