摘  要:目的以山楂和玉米须为原料,研制具有较佳口感的新型复合保健饮品。方法通过使用硫酸-蒽酮比色法测定玉米须提取液中多糖的含量,以单因素实验和正交实验相结合,玉米须提取液中多糖的含量为指标,得到玉米须提取液的最佳提取条件,再通过正交实验和感官评价结合,最终确定山楂玉米须复合保健饮品最佳配方。结果实验结果表明,玉米须提取液最佳提取条件为浸提时间60 min、料液比1∶60、提取温度70℃,山楂玉米须复合保健饮品最佳配方为玉米须汁使用量75%、山楂汁使用量5%、蔗糖使用量6%、柠檬酸使用量0.15%,依此配方可制得清香怡人、酸甜可口、具有独特风味的新型复合保健饮品。Objective To develop a new compound health drink with better taste using hawthorn and corn silk as raw materials.Methods The content of polysaccharides in corn silk extract was determined by using sulfuric acid-anthrone colorimetry.The combination of single factor experiment and orthogonal experiment was used to extract the content of polysaccharide in corn silk.Through the combination of orthogonal test and sensory evaluation,the optimal formula of the compound health drink of hawthorn and corn silk was determined.Results The experimental results show that the optimal extraction conditions for corn silk are 60 minutes extraction time,1:60 ratio of material to liquid,and extraction temperature is 70℃.The best formula for corn silk and hawthorn must be compound health drink is 75%of corn silk juice,and 5%hawthorn juice.The compound beverage prepared by the formula is 5%,the amount of sucrose is 6%,and the amount of citric acid is 0.15%.Through the above formula,a new compound health care beverage with a pleasant fragrance,sweet and sour taste,and unique flavor can be prepared.
