摘  要:“食品化学实验”是食品科学专业的基础课程之一,实验教学是对理论知识的巩固,也是培养学生分析解决问题和实践能力的重要途径。分析“食品化学实验”的教学现状和存在的问题,通过调整课程进度、优化实验项目、改进教学方法、严格要求实验过程和改革考核方式等方法进行探索和实践。通过改革实践,提高了学生对食品化学知识及实验操作的掌握程度,增强了学生自主开展实验的积极性,取得了良好效果。Food Chemistry Experiment is one of the professional courses for food science.Experimental teaching is the consolidation of theoretical knowledge and an important way to cultivate students'ability to analyze problems and practice.This article analyzed the problems and teaching situation in Food Chemistry Experiments,and explored and practiced by adjusting the course schedule,optimizing experiment projects,improving teaching methods,strictly requiring experiment process and reforming assessment methods.Through this reform,students'knowledge of food chemistry and experimental operations have been improved,and students'enthusiasm for conducting experiments independently has been enhanced.
