摘  要:主要研究槲皮万寿菊素的总抗氧化能力,对DPPH、ABTS、OH自由基的清除能力,及对辣椒红素、番茄红素的保护作用。采用紫外分光光度法比较槲皮万寿菊素、槲皮素、乙氧基喹啉(EQ)、茶多酚、BHT等清除自由基及总抗氧化能力,结果表明槲皮万寿菊素具有较强的抗氧化剂清除自由基能力。采用色差法对比添加槲皮万寿菊素、茶多酚、乙氧基喹啉的辣椒红素和番茄红素,结果表明槲皮万寿菊素能大大减缓番茄红素和辣椒红素氧化褪色。槲皮万寿菊素做为抗氧化剂、护色剂具有广阔应用前景。The main research is to determine the total antioxidant capacity of quercetagetin,the scavenging ability of DPPH,ABTS,OH free radicals,and the protective effect of capsaicin and lycopene.The ultraviolet spectrophotometry was used to compare the scavenging free radicals and total antioxidant capacity of quercetagetin,quercetin,ethoxyquin(EQ),tea polyphenols,BHT,etc.The results showed that quercetagetin has a strong antioxidant ability to scavenge free radicals.The color difference method was used to compare capsaicin and lycopene with quercetagetin,tea polyphenol,and ethoxyquin.The results showed that quercetagetin can greatly slow down the oxidation and fading of lycopene and capsaicin.Quercetagetin has broad application prospects as an antioxidant and color protectant.
