摘  要:通过曲质感官检验可以快速、有效地对大曲质量情况进行初步判定,感官检验通常包括香气、断面、曲壳厚度(皮厚)、外表面等4项指标,其中皮厚的传统质量要求为越薄越好。为了科学管控中高温大曲质量,选用洋河中高温大曲样品,利用大曲分层、二阶多项式回归分析和中试生产等研究方法对皮厚控制范围进行分析验证,认为皮厚控制在0.5~1.0 cm内时较传统理念更有利于促进曲质提升。Sensory inspection can quickly and effectively determine the quality of Daqu.Sensory inspection usually includes four indexes,i.e.,aroma,section,shell thickness(skin thickness)and outer surface.Traditional quality requirement of shell thickness is the thinner the better.In order to scientifically control the quality of medium-high temperature Daqu,we took Yanghe medium-high temperature Daqu as the research object,and adopted Daqu layering method,second-order polynomial regression,and pilot production to study the control range of shell thickness of Daqu.It is concluded that controlling the shell thickness in the range of 0.5 cm to 1.0 cm is more conducive to the promotion of Daqu quality.
