摘  要:桂菜产业是广西物产资源、饮食文化、民俗文化、科学技术、营运管理、仓储物流等要素的集中体现,也是广西的优势传统产业、特色发展产业、稳定高速增长产业。“桂菜出桂”是广西地方政府打造广西特产行销全国“桂系列”的品牌策略,实施“树桂菜品牌”工程等措施是在广西“三大定位”背景下的客观要求。研究“桂菜出桂”面临的问题与发展对策,既是当前广西餐饮业走出广西、走向全国、迈向世界的首要环节,更是推进广西经济平衡、健康、可持续发展的必然选择。Guangxi Cuisine is a pretty visiting card of Guangxi.It is an industry boasting Guangxi’s advanta⁃geous traditions,characteristic development and high-speed&stable growth while intensively reflecting such factors of Guangxi as natural products resources,dietary culture,folk culture,science&technology,operation&management,and warehousing&logistics.It is a brand strategy of Guangxi’s local governments to forge“Guangxi Cuisine’s Going Out”into a series of Guangxi’s local special products on sale all over the country and objective demands to carry through such measures as building Guangxi Cuisine Brands under the back⁃ground of Guangxi’s“Three Major Orientations”.Research on the problems and developmental countermeasures up against“Guangxi Cuisine’s Going Out”is the first link of Guangxi’s catering industry to go out of Guangxi and march to the whole nation,the world and even more an inevitable selection of Guangxi for balanced,healthy and sustainable economic development.
