摘 要:本文对面粉增筋剂中非法添加物聚丙烯酰胺的检测技术进行了研究。研究采用淀粉-碘化镉比色法,优化了检测过程当中主要的反应条件。试验结果表明优化条件为:加待测液2mL,pH=5.0的缓冲液10mL,饱和溴水2mL,摇匀后静置13min;加甲酸钠5mL,摇匀后静置5 min;加淀粉-碘化镉5mL,摇匀后静置15min,在550nm处测吸光度。并确定了非离子型、阳离子型、阴离子型聚丙烯酰胺的检测范围在50-150mg·L-1。该方法简单、准确、高效,可作为快检和确证检测技术广泛使用。The detection technology of Polyacrylamide,an illegal additive in flour gluten enhancers,was studied.The method of starch-cadmium iodide was used to optimize the reaction conditions.The results showed that the optimum conditions were as follows:adding 2 ml of liquid to be tested,10 ml of pH=5.0 buffer,2 ml of saturated bromine water,shaking and resting for 13 minutes;adding 5 ml of sodium formate,shaking and resting for 5 minutes;adding 5 ml of starch-cadmium iodide,shaking and resting for 15 minutes,and measuring the absorbance at 550 nm.The detection range of non-ionic,cationic and anionic Polyacrylamide was determined to be 50-150 mg·L-1.The method is simple,accurate and efficient,and can be widely used as a rapid and confirmatory detection technique.
