摘  要:以非糯性玉米淀粉为原料,配制10%浓度的淀粉悬浮液,构建水-淀粉体系,采用臭氧发生器氧化处理,获得经处理的非糯性玉米淀粉颗粒,通过扫描电镜(SEM)、X射线衍射仪分别测定分析玉米淀粉颗粒形貌和结晶特性,探讨臭氧氧化处理对非糯性玉米淀粉颗粒微观结构特性的影响。结果表明,臭氧氧化处理可显著改变非糯性玉米淀粉颗粒微观结构特征,臭氧氧化处理可在颗粒表面形成孔洞,淀粉颗粒表面微孔数目和微孔大小与氧化时间直接相关,氧化时间越长,淀粉颗粒表面微孔越大,颗粒表面微孔数目越多;臭氧氧化处理不改变非糯性玉米淀粉颗粒结晶类型,但可显著降低淀粉颗粒结晶衍射峰强度,增强淀粉颗粒的结晶度。因此,通过控制臭氧氧化处理可改变淀粉颗粒微观结构特性和结晶强度。试验结果可为多孔淀粉的制备生产提供依据。The non-waxy corn starch was processed by ozone oxidized methods,and the granule morphology,crystal properties of non-waxy corn starch were investigated by scanning electron microscopy(SEM)and X ray diffraction,respectively.The results showed that the ozone oxidation treatment could significantly change the microstructure characteristics of non-waxy corn starch.Some micro-pores were formed on the surface of non-waxy corn starch granule during ozone oxidation treatment.The number and size of micro-pores on the surface of starch granule were positively related to oxidation time.However,ozone oxidation treatment did not change the types of crystallization of non-waxy corn starch granule,while it could significantly reduce the intensity of crystal diffraction peaks.Therefore,ozone method was used to modify starch,and effectively change the microstructure characteristics and crystalline properties of starch granule by controlling the ozone oxidation process.The results can provide a theoretical basis for the production of porous starch,which is important for developing function modified starch in theory an industry producing.
