摘  要:西南地区是我国杂粮的一大产区,当地杂粮大多数仅停留在初级加工,深精加工水平有限,深加工的利用率还不到其总产量的10%。本文概述了西南地区杂粮品种及生长情况,现有的深加工技术以及特色杂粮产品,分析了杂粮的加工现状及存在问题,并提出了西南地区杂粮产业发展的建议。In China,the Southwest China is a major production area of miscellaneous grains.Most of the local miscellaneous grains only stay in primary processing,and the level of deep processing is limited,and the utilization rate of deep processing is less than 10%of its total output.This article summarizes the varieties and growth of miscellaneous grains in the Southwest China,the existing deep processing technology and specialty miscellaneous grain products,analyzes the processing status and existing problems of miscellaneous grains industry,and proposes advice for the development of the miscellaneous grain industry in the Southwest China.
