摘  要:研究了采用高效液相色谱法测定鸡肉中肌苷酸的含量。试验采用Agilent TC-C18色谱柱(5μm,φ4.6 mm×250 mm),以0.05 mol/L pH 6.5的磷酸二氢钠缓冲溶液为流动相,流速为1 ml/min,柱温度为30℃,紫外检测波长为254 nm。结果表明,鸡肉中肌苷酸含量测定结果的相对标准偏差为0.56%,检测限为0.05 mg/g,定量限为0.20 mg/g,回收率为98.04%~100%。该方法可更准确更快速的应用于鸡肉中肌苷酸含量的检测分析。The content of inosine monophosphate in chicken was determined by High Performance Liquid Chromatography.The experiment used Agilent TC-C18 chromatographic column(5μm,φ4.6 mm×250 mm),with 0.05 mol/L pH=6.5 sodium dihydrogen phosphate buffer solution as mobile phase,and the flow rate was 1 ml/min,and the column temperature was 30℃,and the UV detection wavelength was 254 nm.The test results showed that the relative standard deviation of the determination results of inosine monophosphate in chicken meat was 0.56%,the detection limit was 0.05 mg/g,the quantification limit was 0.20 mg/g,and the recovery rate was 98.04%-100%.This method can be used more accurately and quickly for the determination and analysis of inosine monophosphate content in chicken.
