摘 要:目的了解桐乡市食品中重金属的污染情况,开展风险分析和为政府制定政策提供科学依据。方法按照《国家食品安全风险监测方案》的要求进行监测,对监测数据进行统计分析。结果对2015年-2018年在食品中铅、镉、汞、砷的监测发现,在这几类食品中重金属污染物均有较高的检出率,但重金属的超标率不高,不同种类的食品受重金属污染程度也不一样。检出率从高到低分别为总砷(88.46%)、镉(88.12%)、铅(62.93%)、总汞(63.16%),镉超标率为4.62%,铅超标率为1.13%,总汞超标率为0.00%。结论桐乡市食品中的重金属检出率较高,其中水产品类食品存在有不同重金属的超标,提示存在轻度程度污染,今后应加强对水产品类的监测和安全监管。Objective To understand the situation of heavy metal contamination in retailed food in Tongxiang City,carry out risk analysis and provide scientific basis for the government to formulate policies.Methods According to the requirements of the National Food Safety Risk Monitoring Program,the monitoring data were analyzed statistically.Results The monitoring of lead,cadmium,mercury and arsenic in food showed a high detection rate of heavy metal pollutants in the monitoring analysis from 2015 to 2018,but the exceeding rate of heavy metals was not high,and the degree of heavy metal pollution in different kinds of food was also different.The detection rates from high to low were total arsenic(88.46%),cadmium(88.12%),lead(62.93%),total mercury(63.16%),cadmium(4.62%),lead(1.13%),and total mercury(0.00%),respectively.Conclusion The detection rate of heavy metals in food in Tongxiang City is relatively high.Among them,there are different kinds of heavy metals exceeding the standard in aquatic products,which indicates that there is a slight degree of pollution.Therefore,the monitoring and safety supervision of aquatic products should be strengthened in the future.
