摘 要:近年来,有关食品被椰毒假单胞菌引发的公共卫生事件逐渐增多,由于椰毒假单胞菌在食品中分布广泛,发病率和病死率高,目前还缺乏特效的解毒措施,因而引发了人们的广泛关注。本文概括了几种常见食品中椰毒假单胞菌的污染情况并分析污染原因,综述了目前椰毒假单胞菌的检测方法,为生产实践、食品中毒事件溯源提供技术参考。Recently, the number of public health incidents caused by Pseudomonas cocovenenans subsp. in food has gradually increased. Due to the wide distribution of Pseudomonas cocovenenans subsp. in food, the high morbidity and fatality rate, and the lack of specific detoxification measures, it has attracted extensive attention. In this paper, the contamination of Pseudomonas cocovenenans subsp. in several common foods was summarized and the causes of contamination were analyzed. The detection methods of Pseudomonas cocovenenans subsp. were reviewed, so as to provide technical reference for production practice and traceback of food poisoning incidents.
