摘  要:目的对不同产地酸枣果肉的品质进行综合评价,为酸枣果肉的资源化开发利用提供研究基础。方法采用紫外分光光度法检测不同产地酸枣果肉的总多糖、总三萜酸、总酚含量;采用高效液相色谱法检测白桦脂酸、齐墩果酸、熊果酸含量,建立指纹图谱并对其进行相似度评价分析;采用DPPH、ABTS法评价体外抗氧化活性。结果不同产地酸枣果肉的总多糖、总酚含量、总三萜酸平均含量分别为(51.01±11.34)mg·g^(-1)、(4.47±0.67)mg·g^(-1)、(2.90±0.57)mg·g^(-1);不同产地酸枣果肉的白桦脂酸、齐墩果酸、熊果酸平均含量分别为(0.52±0.04)mg·g^(-1)、(0.34±0.03)mg·g^(-1)、(0.34±0.03)mg·g^(-1)。不同产地酸枣果肉指纹图谱与对照指纹图谱相似度均大于0.9。聚类分析结果显示,不同产地之间各类型成分含量具有差异。抗氧化实验表明陕西延安(S1)酸枣果肉DPPH·清除率最高,河北马厂沟(S15)酸枣果肉ABTS·^(+)清除率最高,且总酚含量和抗氧化活性具有较大的相关性。结论酸枣果肉中总多糖、总三萜酸、总酚等资源型化学成分含量丰富及抗氧化活性显著,且不同产地之间各类型成分的含量差异较为显著,为各类型资源型化学成分的潜在利用价值的产业化开发提供了参考依据。Objective To evaluate the quality of sour jujube pulp from different origins,and provide foundation for its resource development and utilization.Methods Ultraviolet spectrophotometry was used to detect the content of total polysaccharides,total triterpene acids and total phenols in sour jujube pulp from different origins.The content of betulinic acid,oleanolic acid,and ursolic acid was detected by high performance liquid chromatography.The fingerprints of sour jujube pulp were established and the similarity was evaluated.The antioxidant activities of sour jujube pulp were evaluated with DPPH and ABTS assays in vitro.Results The average content of total polysaccharide,total phenol and total triterpene acid in the sour jujube pulp from different origins were(51.01±11.34)mg·g^(-1),(4.47±0.67)mg·g^(-1),and(2.90±0.57)mg·g^(-1),respectively.The average content of betulinic acid,oleanolic acid,and ursolic acid in the sour jujube pulp from different origins were(0.52±0.04)mg·g^(-1),(0.34±0.03)mg·g^(-1),and(0.34±0.03)mg·g^(-1),respectively.The similarities between the fingerprints of sour jujube pulp from different origins and the control fingerprints were bigger than 0.9.The cluster analysis showed that the content of each component varied with origins.Antioxidant experiments showed that the DPPH·clearance rate of sour jujube pulp in Shaanxi Yan’an(S1)was the highest,and the ABTS·^(+)scavenging rate of that in Hebei Machanggou(S15)was the highest.Additionally,the total phenol content and antioxidant activity exhibited a positive correlation.Conclusion The content of resource-based chemical components such as total polysaccharides,total triterpene acids,and total phenols in sour jujube pulp is rich,indicating significant antioxidant activity.The content of various components variy significantly with origins,which provids a reference for the industrial development and application of resource chemical components.
