摘  要:为研究不同贮运时间对中华绒螯蟹(Eriocheir sinensis)成蟹活力和肝胰腺营养品质的影响,通过模拟电商贮运条件,采用活体解剖和生化分析法,对贮运24、48和72 h的中华绒螯蟹活力进行统计和评价,并比较了肝胰腺的基本营养成分、氨基酸和脂肪酸组成。结果显示:贮运24 h的中华绒螯蟹未见死亡,48 h的死亡率为10.0%,72 h的死亡率为40.0%;中华绒螯蟹活力随贮运时间延长而减弱,其中贮运24 h和48 h的活力依旧强盛,而72 h则活力低迷;水分、粗脂肪和肝胰腺指数等营养指标没有随着贮运时间的延长而发生显著变化,但贮运48 h后的粗蛋白含量下降显著,贮运72 h后的灰分含量也下降显著;在检测的17种氨基酸中,有14种氨基酸的含量在贮运24 h后显著下降,而在检测的24种脂肪酸中,只有1种脂肪酸的含量在贮运24 h后显著下降。本研究表明当前电商环境下的中华绒螯蟹最佳贮运时间为0~24 h,超过24 h后河蟹的成活率和营养品质将明显下降。The vigor of Eriocheir sinensis stored and transported for 24,48 and 72 h were counted and evaluated using vivisection and biochemical analysis by simulating e-commerce storage and transportation conditions to investigate the effects of different storage and transportation times on vigor and nutritional quality of hepatopancreas in adult E.sinensis.Meanwhile,the proximate composition,fatty acid and amino acid composition in hepatopancreas were compared.The results showed that no death was observed in E.sinensis stored and transported for 24 h.The mortality rates were 10.0%at 48 h and 40.0%at 72 h.The vigor of E.sinensis decreased with the extension of storage and transportation time,and the vigor was still strong at 24 h and 48 h,but low at 72 h.There were no significant change in water content,crude fat content and hepatosomatic index.However,the crude protein content decreased significantly after 48 h of storage and transportation.The ash content also decreased significantly after 72 h of storage and transportation.Among the detected 17 amino acids,the contents of 14 amino acids significantly reduced after 24 h of storage and transportation.However,the content of only one fatty acid significantly reduced after 24 h of storage and transportation among the 24 fatty acids detected.This study indicated that the optimal storage and transportation time of E.sinensis under the current e-commerce conditions was 0~24 h,the survival rate and vigor of E.sinensis significantly.reduced after 24 h storage and transportation.
