摘 要:对呼和浩特市周边10个旗县地区的50个奶站(奶牛品种90%以上为荷斯坦奶牛)的牛奶质量进行了全年跟踪检测,得到如下结论:对不同季节牛乳样本的干物质、脂肪、蛋白质、酸度等指标进行分析,得到牛乳干物质在4—9月份含量较低,均在12.0%左右波动,而10—3月,牛乳干物质含量较高,在12.2%~12.4%;不同地区的脂肪含量全年变化无显著差异,且没有明显的规律;非脂干物质在3—8月含量基本稳定,在8.4%左右,1、2、10月含量较高,为8.5%左右,11、12月含量为8.3%左右;蛋白质含量全年变化比较稳定,含量为3.0%左右;牛乳酸度全年变化比较稳定,酸度值在13.59°T左右小幅波动。Fifty milking stations(90%were Holstein cows)of Hohhot and surrounding regions were selected to study the milk compositions during the whole year in this paper,mainly including:Protein,fat,milk solids and acidity of milk were determined at different season.Milk solids level were lower at April to September,about 12.0%,higher at October to March,12.2%~12.4%.Change of fat content at different region showed significant difference during the whole year,and there was no regularity.Content of non-fat milk solids were 8.4%stable at March to August,higher in January,February and October,which 8.5%and 8.3%in November and December.Protein level and acidity was stable during the whole year,which 3.0%and 13.59°T respectively.
