摘 要:牦牛肉产地溯源是实现其优质优价的保障,选用适宜的溯源技术对于精准溯源牦牛肉产地至关重要。基于此,本研究探索了稳定性同位素与矿物元素指纹图谱组合技术在区分牦牛肉产地溯源的可行性。通过同位素质谱仪(IRMS)、电感耦合等离子体质谱(ICP-MS)分别分析了青藏高原4个地区40头牦牛肉样品中3种稳定性同位素及50余种矿物质的含量,使用多元统计分析来确定最有效的溯源指标。基于明显的原产地差异(P<0.05),选择了δ13C、δ15N、δ2H 3种稳定性同位素指标和Na、Fe、As、Se、Mo、Cd、Cs、Ti 8种矿物元素用于进一步的多元统计分析。通过多元统计分析选择了3种元素(δ13C、δ2H、Ti),并建立了牦牛肉可追溯性的判别模型。线性判别分析得出的总体正确分类率为85%,交叉验证率为82.5%。这些结果证明了稳定性同位素与矿物元素指纹图谱组合技术可作为鉴定牦牛肉地理起源的有效方法。The origin tracing ability of yak meat is the guarantee for achieving its high quality and high price,and using suitable trace ability technology is essential for accurate trace ability of the origin of yak meat.Therefore,this study explored the feasibility of the combination technology of stable isotope and mineral finger prints in distinguishing the origin of yak meat.The content of 3 stable isotopes and more than 50 minerals in 40 yak meat samples from four regions of Qinghai-Tibet Plateau were analyzed by IRMS and ICP-MS,and multivariate statistical analysis was used to determine the most effective traceability indicators.Based on the obvious difference in origin(P<0.05),three stable isotopic indexes ofδ13C,δ15N,andδ2H and eight mineral elements of Na,Fe,As,Se,Mo,Cd,Cs,and Ti were selected for further multivariate statistical Analysis.Three elements(δ13C,δ2H,Ti)were selected through multivariate statistical analysis,and a discriminant model for the traceability of yak meat was established.The overall correct classification rate obtained by linear discriminant analysis was 85%,and the cross-validation rate was 82.5%.These results prove that the combined technology of stable isotope and mineral fingerprint can be used as an effective method to identify the geographic origin of yak meat.
