摘  要:目的探讨贵州省居民膳食来源氨基酸摄入水平及相关分析。方法利用2018年贵州省居民营养与健康状况调查数据进行分析,采用分层多阶段整群随机抽样方法,在贵州省按地域确定6个地市,共抽取48个城区居委会、72个县区村,共调查居民1001人。采用食物频率法调查贵州省居民日常食物摄入数据,食物中氨基酸分析根据《中国食物成分表第2版(2009年)》中各类食物氨基酸含量建立数据库,与膳食调查数据进行匹配。结果2018年贵州省居民膳食氨基酸摄入量分析结果显示,城市居民赖氨酸(4782.8±4081.5)mg/d、精氨酸(5379.5±4032.5)mg/d、组氨酸(2114.4±1576.2)mg/d和脯氨酸(3921.3±3284.5)mg/d摄入量明显高于农村居民[(4205.6±3360.9)mg/d,(4834.4±3335.4)mg/d,(1882.7±1301.7)mg/d,(3509.8±2544.1)mg/d](P<0.05);男性居民各类氨基酸摄入量均明显高于女性居民(P<0.05);<18岁、18~59岁、≥60岁3组居民赖氨酸[(4127.3±1896.7)mg/d vs(4480.6±3195.6)mg/d vs(4634.3±4623.0)mg/d]、丝氨酸[(3300.7±1379.6)mg/d vs(3561.0±2357.4)mg/d vs(3731.1±3557.6)mg/d]、酪氨酸[(2819.1±1164.9)mg/d vs(3127.0±2052.1)mg/d vs(3280.5±3247.6)mg/d]、苏氨酸[(2791.3±1212.0)mg/d vs(3066.0±2121.4)mg/d vs(3212.1±3227.1)mg/d]、甘氨酸[(3191.0±1308.2)mg/d vs(3602.8±2382.2)mg/d vs(3768.7±3725.4)mg/d]、缬氨酸[(3795.6±1559.6)mg/d vs(4131.4±2650.6)mg/d vs(4293.8±3986.9)mg/d]、丙氨酸[(4178.7±3202.2)mg/d vs(4423.8±3683.0)mg/d vs(4048.7±2909.7)mg/d]摄入量差异有统计学意义(P<0.05);成年人群必需氨基酸的摄入量均达标2007年WHO/FAO/UNU成人必需氨基酸的平均需要量标准。结论贵州省膳食氨基酸摄入量受地区、性别和年龄影响,其成年人必需氨基酸摄入量均达标。Objective To investigate the dietary amino acid intake level and its correlation among residents in Guizhou Province.Methods Based on the data of nutrition and health status survey of residents in 2018,a stratified multi-stage cluster random sampling method was used in 6 cities in Guizhou Province.A total of 48 urban neighborhood committees and 72 counties,districts and villages were selected with a total of 1001 residents.Food frequency method was used to investigate the daily food intake data of residents in Guizhou Province.The amino acid content in food was analyzed according to the amino acid content of various kinds of food in"Chinese food composition table 2 nd Edition 2009",which was matched with the dietary survey data.Results The results of dietary amino acid intake analysis on Guizhou Province residents in 2018 showed that the intake of lysine(4782.8±4081.5)mg/d,arginine(5379.5±4032.5)mg/d,histidine(2114.4±1576.2)mg/d and proline(3921.3±3284.5)mg/d of urban residents was significantly higher than that of rural residents[(4205.6±3360.9)mg/d,(4834.4±3335.4)mg/d,(1882.7±1301.7)mg/d,(3509.8±2544.1)mg/d,respectively](P<0.05).All kinds of amino acid intakes of male residents were significantly higher than those of female residents(P<0.05).There were significant differences in the intake oflysine[(4127.3±1896.7)mg/d vs(4480.6±3195.6)mg/d vs(4634.3±4623.0)mg/d,serine(3300.7±1379.6)mg/d vs(3561.0±2357.4)mg/d vs(3731.1±3557.6)mg/d],tyrosine[(2819.1±1164.9)mg/d vs(3127.0±2052.1)mg/d vs(3280.5±3247.6)mg/d],threonine[(2791.3±1212.0)mg/d vs(3066.0±2121.4)mg/d vs(3212.1±3227.1)mg/d],glycine[(3191.0±1308.2)mg/d vs(3602.8±2382.2)mg/d vs(3768.7±3725.4)mg/d],valine[(3795.6±1559.6)mg/d vs(4131.4±2650.6)mg/d vs(4293.8±3986.9)mg/d and alanine(4178.7±3202.2)mg/d vs(4423.8±3683.0)mg/d vs(4048.7±2909.7)mg/d]in the three groups(<18 years old,18-59 years old,≥60 years old)(P<0.05).The intake of essential amino acids in adult population met the average requirement of who/FAO/UNU in 2007.Conclusion D
