摘 要:本研究以鱼鳞为原料,采用热水法提取明胶,根据单因素实验结果,考察了的不同物料比,不同温度,不同时间对提取鱼鳞明胶的影响。经过前处理,水浸,4℃放置,根据成胶情况进行对比,进而得到热水法提取鱼鳞明胶的最佳条件。此法明胶提取的明胶品质较好,且对生产要求低,操作简便,对设备要求低,无污染,有利于环境保护。随着明胶的利用逐渐广泛,我们需要探寻更优化的提取方法。Fish scales were used as raw materials,and gelatin was extracted by hot water method.Based on the results of single factor experiments,the effects of different material ratios,different temperatures and different times on the extraction of fish scale gelatin were investigated.After pre-treatment,water immersion,and storage at 4℃,comparison was made according to the gelation situation,and the best conditions for extracting fish scale gelatin by hot water method were obtained.The gelatin extracted by this method had good quality,low production requirements,simple operation,low equipment requirements,no pollution,and was beneficial to environmental protection.With the increasing use of gelatin,more optimized extraction methods were needed to be explored.
