摘 要:目的:了解市售禽畜产品及水产品中甲醛含量,为风险排查、风险预警及科学监管提供数据支撑。方法:随机从渝东南地区各区县批发农贸市场、中小型餐馆和超市采集450批次样品,依据《进出口食品中甲醛的测定液相色谱法》(SN/T 1547—2011),采用高效液相色谱法进行测定。结果:甲醛含量超过5.0 mg·kg^(-1)的样品共有36份,占比为8.0%,甲醛含量最高的为鸭肠,达到207 mg·kg^(-1)。结论:渝东南地区鸭肠中存在人为添加甲醛的情况,建议继续加强对禽副产品(鸭肠)甲醛含量监测,加大监管力度。加强对禽畜产品及水产品甲醛本底含量的研究,制定相关标准,为禽畜产品及水产品安全管理提供依据。Objective:Understand the formaldehyde content in livestock products and aquatic products,and provide data support for risk investigation,risk warning and scientific supervision.Methods:Samples were randomly collected from wholesale markets,small and medium-sized restaurants and supermarkets in Southeast of Chongqing.According to SN/T 1547—2011.Results:There were 36 samples with formaldehyde content more than 5.0 mg·kg^(-1),accounting for 8.0%,The highest formaldehyde content was in duck intestine,which was 207 mg·kg^(-1).Conclusion:It is suggested to strengthen the monitoring of formaldehyde content in poultry by-products(duck intestines)and strengthen the supervision.it is very important to strengthen the research on the background formaldehyde content of livestock products and aquatic products,formulate relevant standards,and provide basis for the safety management of livestock products and aquatic products.
