摘 要:采用冷冻真空-热风联合干燥技术对金花茶花朵进行干燥,以微波干燥、冷冻真空干燥作为对照,对3种不同方法干燥的金花茶花朵的感官品质、内含成分、贮藏过程中品质变化、干燥效率等指标进行综合评价。结果表明:冷冻真空-热风联合干燥所制的金花茶花朵综合品质明显优于其他两种干燥工艺,并能较好地保留花朵中茶多酚活性成分,在室内常温下(18~22℃)贮藏时间长、不易变质,且干燥效率高于冷冻真空干燥。This experiment used freeze vacuum combining with hot blast drying technology to dry the camellia nitidissima flowers.Compared with microwave drying and freeze vacuum drying,a comprehensive evaluation of the sensory quality,the internal components and the quality changed during storage,drying efficiency and other indicators of camellia nitidissima flowers when they were dried by these three different drying methods.The results showed that the comprehensive quality of camellia nitidissima flowers dried by freeze vacuum combining with hot blast drying technology was obviously better than that of the other two drying methods.This technology could well preserve the active components of tea polyphenols and attain a longer storage time and a better deterioration resistance at common indoor temperature(18~22°C).Moreover,the drying efficiency of this technology was higher than that of freeze vacuum drying.
