摘 要:目的了解保定市售水产品中15种元素的含量水平,分析污染状况,评估其潜在的健康风险。方法 2019—2020年对保定市市售6种水产品中锂(Li)、铝(Al)、钒(V)、铬(Cr)、锰(Mn)、镍(Ni)、铜(Cu)、钡(Ba)、砷(As)、汞(Hg)、硒(Se)、镉(Cd)、锡(Sn)、锑(Sb)、铅(Pb)含量进行检验,用单因子污染指数(Pi)评价污染水平,采用目标危险系数(THQ)评估其对人体的健康风险。结果不同水产品中元素含量存在差异,Cd超标率为4.3%,超标产品均为甲壳类;水产品的整体污染程度较低,藻类As为重度污染(Pi值为7.8),甲壳类As为中度污染(Pi值为0.85),甲壳类Cd和Cu、水生蔬菜Cd为轻度污染(Pi值分别为0.51、0.37、0.38);健康风险评估显示大部分水产品中元素在可接受水平,儿童和成人食用藻类及儿童食用甲壳类的复合健康风险指数(TTHQ)>1,儿童的健康风险普遍高于成人。结论保定市售部分甲壳类Cd超标,藻类和甲壳类存在一定的健康风险,其中As是主要危害元素,应加强监测力度,保证食品安全。Objective To understand the content level of 15 elements in aquatic products sold in Baoding,analyze the pollution status and evaluate the potential health risks. Methods The contents of lithium(Li),aluminum(Al),vanadium(V),chromium(Cr),manganese(Mn),nickel(Ni),copper(Cu),arsenic(As),selenium(Se),cadmium(Cd),tin(Sn),antimony(Sb),barium(Ba),mercury(Hg),and lead(Pb) in six aquatic products sold in Baoding from 2019 to 2020 were detected. The pollution level was evaluated by single factor pollution index(Pi),and the target hazard quotient(THQ) was used to evaluate its health risks to humans.Results The content of metals in different aquatic products was different. Cd exceeding rate was 4.3%,and the products exceeding the standard were crustaceans. The overall pollution degree of aquatic products was low. As in algae was heavily polluted(Pi=7.8),and in crustaceans was moderately polluted(Pi=0.85). Cd and Cu in crustaceans and Cd in aquatic vegetables were slightly polluted(Pi=0.51,0.37,0.38).The health risk assessment showed that the elements in most aquatic products were at acceptable levels. The compound health risk index(TTHQ) of children and adults eating algae and children eating crustaceans was>1,and children’s health risks were generally higher than those of adults. Conclusion The content of Cd in some crustaceans sold in Baoding exceeds the standard. Algae and crustaceans have certain health risks,and As is the main hazard element. Monitoring efforts should be strengthened to ensure food safety.
