摘  要:非物质文化遗产中的传统技艺是国家的文化瑰宝,淮扬地区的非遗美食文化,是文化瑰宝中的一颗璀璨明珠。在文献梳理的基础上,运用“R语言”软件提取并分析其“特色”文化内涵。结合实地考察、问卷调研和深度访谈,发现淮扬地区非遗美食及技艺存在认知度不高、与旅游产业融合不深入、传承工作面临困境等问题。提出通过旅游体验等活动提高游客非遗美食及技艺的认知度,从而多维度宣传非遗文化,加强非遗美食技术及产品开发,保障活化传承等建议,以期促进淮扬地区非遗技艺传承及美食旅游的蓬勃发展。The traditional skills in the intangible cultural heritage are the national cultural treasures,and the intangible food culture in the Huaiyang area is a shining pearl among the cultural treasures.Based on the literature review,the“R language”software is used to extract and analyze its“characteristic”cultural connotation.By combining field investigations,questionnaire surveys and in-depth interviews,it was found that the Huaiyang food and its skills are facing problems such as low recognition,lack of in-depth integration with the tourism industry,and difficulties in inheritance.It is proposed to increase tourists’awareness of food and its skills through tourism experiences and other activities,so as to promote multiple dimensions,strengthen technology and product development,and ensure the activation and booming of inheritance of intangible cultural heritage in Huaiyang Food.
