摘  要:远红外辅助热泵干燥是一种新型的组合式脱水干燥技术,将热泵技术与远红外技术有机结合,具有干燥速率快、能耗低、无污染的优势,能较好保持食品的营养品质和固有色泽,目前已被应用于水产品、农产品等多个领域。文章介绍了远红外辅助热泵干燥的原理和技术特征,远红外辅助热泵技术在干燥果蔬产品、水产品和花卉产品方面的研究进展,并分析了其在食品加工中的应用前景,为提高远红外辅助热泵干燥技术在食品加工领域中的研究深度和广度提供科学参考。Far-infrared assisted heat pump drying is a new type of combined dehydration and drying technology that organically combines heat pump technology with far-infrared technology.It has the advantages of fast drying rate,low energy consumption and no pollution.It can highly maintain the nutrients and color of food.It has been applied to aquatic products,agricultural products and other fields.This article summarized the principle and the characteristics of far-infrared-assisted heat pump drying,as well as its application in drying fruits,vegetables,aquatic products and flowers.The future development of far-infrared assisted heat pump drying technology was finally proposed.This work may provide a scientific reference for some further research of far-infrared assisted heat pump drying technology in food processing.
