摘  要:为了探究青桔汁树脂降酸中的工艺及青桔蜂蜜复合汁的开发,本试验通过比对6种离子交换树脂对青桔汁中总酸的静态吸附特性,测定吸附过程青桔汁主要理化指标,筛选青桔汁降酸最佳离子交换树脂;并对比不同流速对青桔汁降酸的影响,筛选出离子交换树脂的最佳流速;基于蜂蜜可以为果汁提供糖分,对比不同比例的青桔蜂蜜复合汁的理化指标,选定青桔蜂蜜复合汁的最佳配比。结果表明,L400型离子交换树脂最适合青桔汁降酸,脱酸率达到了66.7%;试验证明,流速对L400型树脂动态动力学曲线影响较大,4 BV/h为最佳吸附降酸流速,温度为室温。青桔汁与蜂蜜的最佳调配比例为5∶1,该比例下复合汁的糖酸比为13.5∶1,此时的青桔蜂蜜复合汁的酸甜适口。In order to explore the reducing acid technology of resin on green orange juice and the development of green orange-honey compound juice,this experiment compared the static adsorption characteristics of six ion exchange resins on titratable acid in green orange juice,determined the main physical and chemical indexes of absorption process on green orange juice,and screened the best ion exchange resin for reducing acid of green orange juice.The optimal flow rate of ion exchange resin was selected by comparing the effects of different flow rates on the acid reduction of green orange juice.Based on the fact that honey could provide sugar for fruit juice,the best ratio of green orange-honey compound juice was selected by comparing the physical and chemical indexes of different proportions of green orange-honey compound juice.The results showed that L400 ion exchange resin was the most suitable for reducing acid of green orange juice with 66.7%deacidification rate.The experimental results showed that the flow rate had a greater effect on the dynamic dynamic curve of L400 resin.The optimum conditions for acid reduction by adsorption were flow rate of 4 BV/h under room temperature.The sugar:acid of compound juice of green orange-honey,with the palatable sweet and sour,was 13.5∶1 with the optimal mixing ratio of green orange juice∶honey 5∶1.
