摘  要:利用自主筛选的高活性乳酸菌发酵大豆,经低温干燥制粒制成一种新型乳酸菌豆粉颗粒冲剂。采用微生物纯培养技术,用自主选育的高活性乳酸菌发酵大豆而成益生豆,将其烘干、研磨、添加辅料、制粒、再次烘干和整粒,即成乳酸菌豆粉颗粒冲剂。通过对制成乳酸菌豆粉颗粒冲剂辅料种类及加入量的考察优选出最佳工艺,结果经乳酸菌发酵后烘干的最佳工艺配比为m(豆粉)∶m(绵白糖)∶m(麦芽糊精)∶m(淀粉)∶m(碳酸钙)=2.0∶1.1∶0.8∶2.6∶0.8。这种营养健康的乳酸菌豆粉颗粒冲剂可用于工业化生产,有广阔的市场前景。A new type of Lactobacillus soybean powder granule was prepared by using the high activity Lactobacillus that was selected by ourselves,and was fermented and granulated at low temperature.Pure microbial culture technology is adopted to ferment soybeans into probiotics with self-developed highly active Lactobacillus,which are dried,ground,added auxiliary materials,granulated,re-dried and whole granulated to form Lactobacillus bean powder granule.The process was optimized by investigating the type and number of excipients in the preparation of Lactobacillus bean powder granules.The results showed that the optimal drying ratio after lactic acid bacteria fermentation was m(soybean flour)∶m(soft sugar)∶m(maltodextrin)∶m(starch)∶m(calcium carbonate)=2.0∶1.1∶0.8∶2.6∶0.8.This kind of nutritious and healthy Lactobacillus bean powder granule can be used in industrial production and has broad market prospects.
