摘　　要：肽与金属离子螯合物是含有环状结构的配合物,是肽和金属离子经过2个或多个配位体螯合环的鳌合作用而得到的。它作为一种新兴的金属元素补充剂,在模拟肠道消化系统中生物稳定性比较高,是吸收和输送金属元素载体的最佳选择,同时又具有抗氧化、抑菌等功能特性,在食品及其他行业中应用广泛。就肽和多种金属离子进行螯合,对螯合物的螯合过程、制备方法、营养功能和应用分别进行介绍,并对其发展前景进行综述。Peptide chelates with metal ions are complexes with ring structure,which are obtained by the cooperation of two or more ligands chelating rings.As a new metal element supplement,it has high biological stability in the simulated intestinal digestive system,and is the best choice for absorbing and transporting metal element carriers.At the same time,it has antioxidant,antibacterial and other functional properties,and is widely used in food and other industries.The chelating process,preparation method,functional properties and applications of the chelates are introduced,and the development prospect of the chelates is reviewed.
