摘 要:中药材在生产加工过程中尤其是储藏期间,若温度、水活度等环境条件控制不当,极易产生黄曲霉毒素。黄曲霉毒素具有强烈的致癌、致畸、致毒性,对人及动物肝脏组织有破坏作用。系统梳理中药材黄曲霉毒素污染状况后发现,种仁类及部分动物类药材污染率更高。分析了黄曲霉毒素在中药材栽培生产、加工炮制、储藏运输等环节的污染途径,并结合物理、化学及其他方面抑制黄曲霉毒素产生的方法进行重点阐述,旨在为中药材黄曲霉毒素污染防控提供理论参考。In the process of production and processing of traditional Chinese medicinal materials especially during storage,if environmental conditions such as temperature and water activity are not properly controlled,aflatoxins are easily produced,which is strongly carcinogenic,teratogenic,toxic,and can damage human and animal liver tissues.After systematically combing the aflatoxin contamination of traditional Chinese medicinal materials,it was found that the contamination rate of seed kernels and some animal medicine was higher.Based on this analysis,the contamination pathways of aflatoxin in the cultivation and production,processing,storage and transportation were analyzed,and the methods for inhibiting the production of aflatoxin in physical,chemical and other aspects were emphasized,aiming to provide theoretical references for the prevention and control of aflatoxin contamination in traditional Chinese medicinal materials.
