摘 要:目的揭示深圳市集中式消毒餐饮具的卫生状况,为卫生监督执法提供参考和技术支撑。方法随机抽检深圳市2017—2020年集中消毒服务单位消毒的餐(饮)具,检测感官、游离性余氯、阴离子合成洗涤剂、大肠菌群和沙门氏菌指标,并对抽检餐具的卫生状况进行分析。结果共抽检深圳市餐(饮)具集中式消毒服务单位104家,集中式消毒餐具312套,合计1560件样本,检测项目的总体合格率为95.83%,五项检测指标中游离性余氯和沙门氏菌两项指标的合格率均为100%,大肠菌群和阴离子合成洗涤剂的合格率较低,四年总合格率分别为97.43%和98.78%;不合格的餐具类型以筷子为主。各年度抽检样品合格率分别为97.03%、94.87、94.57%和96.94%,四年间样品合格率变化趋势无统计学意义(趋势性X^(2)=0.052,P-trend=0.819);抽检单位总体合格率为83.65%。结论2017—2020年深圳市集中式消毒餐(饮)具卫生质量在较高水平上保持稳定。Objective To reveal the health status of Shenzhen centralized disinfection,and provide reference and technical support for health supervision law enforcement.Methods Randomized Shenzhen City 2017-2020 concentrated disinfection service unit disinfection(drinking)sets,detecting sensory,free residual chlorine,anionic synthesis detergent,coliform group and Salmonella index,and analyzed the sanitary condition of the sampling tableware.Results There were a total of 104 centralized disinfection services units,312 sets of centralized disinfection tablets,total 1560 samples,and the overall pass rate of the test project was 95.83%.Amongfive test indicators,the idle residual chlorine and the Salmonella index were 100%,the qualified rate of coliforms and anionic synthesis detergents were lower,97.43%and 98.78%,respectively;the unqualified tableware are mainly chopsticks.The qualified rate of the samples of each year was 97.03%,94.87,94.57%and 96.94%,and there was no statistically significant change in the four-year qualification rate(P-trend=0.819);the overall pass rate of the sampling unit was 83.65%.Conclusion 2017—2020,thesanitary statusof Shenzhen centralized disinfectant tableware is stable at a high level.
