摘 要:目的评估上海市宝山区居民通过非生食水产品暴露副溶血性弧菌的健康风险,为防控副溶血性弧菌引起的食源性疾病提供参考,为职能部门制订风险管理措施提供依据。方法按照微生物风险评估的程序,应用半定量风险评估软件Risk Ranger结合居民膳食消费量数据和水产品监测结果进行评估。结果预计每人每天因进食污染了副溶血性弧菌的海水产品、淡水产品而患病的概率分别为3.53×10^(-7)、5.77×10^(-7),人群中每年患病的人数分别为196人和321人,风险评分分别为45、47,加工过程、食用前的制备等是人群感染风险的敏感性因素。结论上海市宝山区非生食水产品中副溶血性弧菌的风险等级为中度风险,需采取针对性的风险管理措施。Objective To assess the health risk of Vibrio parahaemolyticus exposure to non-raw-eat aquatic products by residents in Baoshan District of Shanghai,to provide a reference for the prevention and control of food-borne diseases caused by Vibrio parahaemolyticus,and to provide a basis for the functional departments to formulate risk management measures.Methods According to the microbiological risk assessment procedure,the semi-quantitative risk assessment software,Risk Ranger was applied in conjunction with dietary consumption date and fish monitoring reaults.Results It was estimated that the probability of illness per person per day due to consumption of seawater products and freshwater products contaminated with Vibrio parahaemolyticus were 3.53×10^(-7)and 5.77×10^(-7)respectively.With 196 and 321 illnesses per year in the population,and the risk scores were 45 and 47,respectively.The processing and preparation before consumption being susceptibility factors for the risk of infection in the population.Conclusion The risk level for Vibrio parahaemolyticus in non-raw-eat aquatic products in Baoshan District of Shanghai was moderate risk,and requires targeted risk management measures should be implemented.
