摘　　要：青稞作为天佑德青稞酒制曲和酿造的唯一原料具有独特之处,主要论述了天佑德青稞酒"曲粮合一"的工艺特点,详细介绍了制曲工艺、清蒸清烧四次清、天酿工艺及酒体特点,并对青稞香型的建立与发展进行展望。As the only raw material,Qingke is unique for making Daqu and brewing Tianyoudehighland barley baijiu.This paper mainly discusses the technological characteristics of"Combination of Daqu and grain"in the production process of Tianyou highland barley baijiu,also introducingthe the process of making Daqu,steaming and fermentating grain for four times,the characteristics of"tianniang programe"and the liquor body.We have prospect for establishing and developinghighland barley light flavor type.
