摘  要:采用传统可培养技术和非培养分析技术解析白酒酿造微生物群落多样性,建立白酒酿造微生物产生物酶和风味物质筛选评价模型,建立白酒酿造微生物抗逆性筛选评价模型,建立现代化企业微生物菌种资源库--扳倒井白酒酿造菌种资源库,实现白酒酿造功能微生物的安全保藏和高效利用。通过功能微生物对大曲培育过程和白酒酿造过程的调控,促进了白酒生产质量的提高。Using traditional cultivable technology and non-cultivating analysis technology to analyze the diversity of microbial communities in liquor brewing,Establishment of a screening evaluation model for enzymes and flavor substances produced by microorganisms in liquor brewing,Establishing a screening and evaluation model of microbial resistance in liquor brewing,Establish a modern enterprise microbial strain resource bank--Bandaojing liquor brewing strain resource bank,Realize the safe preservation and high-efficiency utilization of the functional microorganisms in liquor brewing.Functional microorganisms promote the improvement of liquor production quality by regulating the Daqu cultivation process and liquor brewing process.
