摘 要:宠物主食罐头是一类满足宠物全价营养需要的重要食物来源之一,但是在高温高压下部分营养物质可能发生损耗。为探究高温高压条件下宠物主食罐头营养物质的损耗情况,测定灭菌前后实验组和空白对照组罐体内食物的部分营养物质含量及其损耗率。研究结果表明,罐头中的B族维生素(硫胺素和核黄素)在灭菌后损失50%以上,镁元素和铁元素的含量在灭菌后含量不降反升,牛磺酸的损失率小于2%。本实验具有一定的实际指导意义。Canned pet staple food is one of the important food sources that meet the full-price nutritional needs of pets, but some nutrients may be lost under high temperature and pressure. In order to explore the loss of nutrients in canned staple foods for pets under high temperature and high pressure conditions, the content of some nutrients in the canned foods in the experimental group and the blank control group before and after sterilization and their loss rate were determined. The results of the study showed that the B vitamins(thiamine and riboflavin) in the canned food after sterilization lost more than 50% after sterilization, and the content of magnesium and iron did not decrease but increased after sterilization. The acid loss rate is less than 2%. This experiment has certain practical guiding significance.
