摘　　要：富硒大麦芽富含蛋白质、糖类、黄酮、多酚和矿物质硒等营养元素和生物活性物质,具有补充营养素、抗氧化、抗肿瘤、增强机体免疫力等保健功效,可开发为营养保健功能食品。本文对富硒大麦芽的主要营养成分、功能特性以及富硒大麦芽功能食品的研究开发现状进行了总结和分析,以期为富硒大麦芽产业发展提供参考。Selenium-enriched barley malt is rich in nutrients and biologically active substances such as protein,carbohydrates,flavonoids,polyphenols and mineral selenium.It has health function such as supplementing nutrients,anti-oxidation,anti-tumor,and enhancing immunity of the body,and can be developed into nutritional and health functional foods.This paper summarized and analyzed the main nutrient composition,functional characteristics of selenium-enriched barley malt,and the research and development status of selenium-enriched barley malt functional foods,in order to provide references for the development of selenium-enriched barley malt industry.
