摘  要:以糯性玉米淀粉颗粒为对象,构建5%水-淀粉体系,通过臭氧氧化处理,采用扫描电子显微镜、偏光显微镜、X射线仪分别测定了臭氧处理前后淀粉颗粒微观结构、偏光特性、结晶特性。结果表明:臭氧氧化处理会在淀粉颗粒表面形成微孔,氧化处理5 min可形成许多微孔,微孔直径较小;氧化处理120 min淀粉表面出现较多空洞,孔洞较浅;当氧化处理超过480 min,会破坏颗粒表面微孔结构并致使微孔相连;玉米淀粉颗粒偏光十字特征,随氧化处理时间延长而减弱;臭氧氧化会影响玉米淀粉颗粒结晶特性,淀粉颗粒结晶度随氧化时间延长先增大,然后逐渐降低。在臭氧氧化过程中,通过控制臭氧氧化条件,可在淀粉颗粒表面形成多孔结构。该研究结果可为多孔淀粉制备及应用提供理论参考。In the present study,waxy corn starch was processed by ozone oxidation under different conditions.The microstructure,polarized light properties and crystallization properties of waxy corn starch granule were determined by scanning electron microscopy,polarized light microscope and X-ray instrumentation,respectively.Results showed that the number and size of micro-pores on the surface of waxy corn starch granule increased with oxidation time,some pores are obviously observed on the surface after oxidation treated with 5 min,clear big pores on the starch surface when treated with 120 min,however,numerous big pores were obtained and some pores were connected together after ozone treated with 480 min.On the other hand,the polarized cross became weakening with oxidation time increasing,however,the crystalline intensity degree increased with oxidation time in first,and then decreased.We can obtained porous starch and changed the surface structure of starch granule by controlling ozone oxidation conditions.Therefore,ozone processing is a potential and useful method for starch modification in industry.
