摘 要:研究微波辅助混合提取剂提取南瓜黄色素时的主要影响因素。通过单因素试验及正交试验确立试验体系,根据类胡萝卜素的摩尔消光系数计算南瓜黄色素的提取量。混合提取剂能提高南瓜黄色素的提取量,料液比对南瓜黄色素提取影响极显著,微波功率对南瓜黄色素的提取影响显著。最佳提取工艺为料液比1∶15,微波功率550 W,微波时间100 s。在此条件下,南瓜中南瓜黄色素的提取量为65.8 mg/100 g。To study the major influential factors of extraction by microwave assisted mixed extraction agent of pumpkin yellow pigment.To establish the experiment system by single factors and orthogonal experimental design.According to carotenoid molar extinction coefficient to calculate the content of pumpkin yellow pigment.Mixed extraction agent can improve extraction content of pumpkin yellow pigment,solid liquid ratio on pumpkin yellow pigment extraction were very significant effect,microwave power on the extraction effect of pumpkin yellow was significant.The optimum extraction process were achieved:solid liquid ratio 1∶15,microwave power 550 W,microwave time 100 s.Under this conditions,extraction content of pumpkin yellow pigment was 65.8 mg/100 g.
