摘 要:目的了解含铝添加剂限量标准调整后下城区市售食品中铝残留情况,为进一步开展针对性的监管措施提供科学依据。方法2015年—2019年在下城区的超市、餐饮店和农贸市场采集市售的7类538份食品,按照国家统一的方法进行含铝添加剂残留量检测并根据现行标准进行结果分析。结果538份样品含铝添加剂检出率为73.0%,平均铝残留量为74.97 mg/kg,最高值样品是海蜇,达1390.00 mg/kg。7类食品含铝添加剂平均超标率为8.9%,其中即食海蜇超标率最高,为49.1%,其次是油炸面制品21.9%,超标率较低的食品是面粉及生面条、膨化食品、发酵面制品、粉丝粉条、烘焙食品,不同类别食品的超标率差异有统计学意义(χ^(2)=132.027,P<0.05);农贸市场食品含铝添加剂超标率(25.5%)高于超市(12.2%)和餐饮店(6.5%)(χ^(2)=17.982,P<0.05);散装食品的超标率(13.4%)高于预包装食品(5.9%)(χ^(2)=8.832,P<0.05)。结论下城区市售食品含铝添加剂超标率总体不高,但7类食品均存在超标或非法添加问题,监管部门应引起重视,加大管理力度,尤其对即食海蜇、油炸面制品、农贸市场食品和散装食品进行重点监管。Objective To evaluate the residual aluminum in commercially available food in Xiacheng District of Hangzhou City after the adjustment of the limit standard of aluminum additives,and to provide scientific basis for the further targeted food safety supervision.Methods A total of 538 samples in 7 categories of food were collected from supermarkets,restaurants and farmers’markets from 2015 to 2019 in Xiacheng District.The residual aluminum in samples was detected according to the national unified and the results were analyzed according to the current standards.Results The detection rate of aluminum additives in 538 samples was 73.0%,the average value was 74.97 mg/kg,the highest value was observed in jellyfish,up to 1390.00 mg/kg.The average exceeding rate of aluminum additives in 7 categories of food was 8.9%,among which jellyfish exceeded the stand⁃ard at the highest rate of 49.1%,followed by the fried noodles at the rate of 21.9%.There was statistical significance on the difference in exceeding standard rate among different food categories(χ^(2)=132.027,P<0.05).The exceeding rate of food alu⁃minum additives in farmersmarkets was 25.5%,higher than that in supermarkets(12.2%)and restaurants(6.5%)(χ^(2)=17.982,P<0.05).The exceeding rate of bulk food was 13.4%,higher than that of pre-packed food(5.9%)(χ^(2)=8.832,P<0.05).Conclusion In general,the exceeding rate of aluminum additives in commercially available food was not high in Xiacheng District.However,there are problems of excessive or illegal addition in all seven categories of food.It is recommen⁃ded to increase supervision to Jellyfish,fried flour products,market food and bulk food.
