摘 要:本文对美国红鱼与罗非鱼带鳞鱼皮胶原蛋白提取技术预处理指标进行分析。试验表明美国红鱼的脱灰鱼鳞提取明胶收率为30.92%、B值为2.2%,570 nm处的透过率为99.2%,其脱脂鱼皮提取明胶收率为20.64%、B值为2.6%,570 nm处的透过率为99.0%,分析认为美国红鱼带鳞鱼皮用于工业化生产明胶或胶原蛋白技术可行,原料充足,前景广阔。In this paper,the index analysis of the pretreatment technology for the extraction of collagen from the skin of Sciaenops ocellatus and tilapia fish skin was carried out.The results showed that the yield of gelatin extracted from scale was 30.92%,the b value was 2.2%and the transmittance at 570 nm was 99.2%.The yield of gelatin extracted from skin was 20.64%,the b value was 2.6%and the transmittance at 570nm was 99.0%.It was considered that the technology of gelatin or collagen production from scale skin of red carp was feasible,and the raw materials were sufficient and the prospect was broad.
