摘 要:中国白酒市场酱香热,各地纷纷上马酱酒项目,消费者对于什么才是地道、纯正的优质大曲酱香酒理解有一定的偏差。一些劣质酒打着核心产区优质大曲酱香酒在宣传和销售,损害了大曲酱香酒核心产区和优质大曲酱香酒的名誉,不利于酱酒行业的健康发展。从优质大曲酱香酒感官风味特点和风格的独特性中,提炼出大曲酱香酒香和味的“纯正度”这个概念,倡议在大曲酱香酒感官风味品评标准体系中,加入对于香气纯正度和口味纯正度的考评打分。从而正确引导酒企和消费者,促进酱香酒行业健康发展。As Maotai-flavored liquor is hot in China's liquor market,many places have launched Maotai-flavored liquor projects,and consumers have certain deviations in understanding what is authentic and pure high-quality Daqu Maotai-flavored liquor.Some inferior quality daqu maotai-flavor liquor wine in the core region in the promotion and sales,damaged the daqu maotai-flavor liquor core region and the reputation of high quality daqu maotai-flavor liquor,is not conducive to jam the healthy development of wine industry,the author from the high quality daqu maotai-flavor liquor sensory flavor characteristics and unique style,refined maotai-flavor daqu aromas and flavour of"pure"this concept,initiative in daqu maotai-flavor liquor sensory evaluation criteria system,the flavor to join for the fragrance is pure and pure taste degrees evaluation score.In order to correctly guide the wine enterprises and consumers,promote the healthy development of Maotai-aromatic wine industry.
